The most well-known of Taiwanese oolongs, named for the mountain where it is grown, Ali Shan delivers the classic Gao Shan, or high mountain, oolong experience. Tie Guan Yin (Iron Goddess of Mercy), is the name of a varietal of tea, and a process involving lightly oxidizing, rolling and baking the leaves. The finished product is a full-bodied tea with a sharp, piney, vegetal flavor, with metallic hints of minerals. This one is a heavily baked Muzha style oolong. Brew with boiling water, steep many times, and enjoy this ancient formula!
