Senchas are noted for their delicate sweetness, mild astringency and flowery-green aroma. Unlike the yellow appearance of Chinese green teas, sencha appears green to almost clear in the cup. It serves as a good accompaniment to seafood, and its assertive taste even stands up to chocolate. It is grown in full sunlight, and the youngest tea leaves and buds are used to produce this tea. The leaves are steamed to halt oxidation, rather than fried like most greens. The leaves are then dried and rolled into shape.
